Corn Side Dishes

Corn side dishes make any meal more delicious!

Corn is a July Foods of the Month! Health benefits of corn include fiber and antioxidants, which our OrganWise Guys love. Also, corn is tastiest in the summer because it is fresh. Be sure to pick up some fresh (non-GMO) corn, which is the best value, from your local grocery store this summer to make these tasty corn side dishes for your next get together:

Corn and Brussels Sprouts – Cut fresh Brussels sprouts in half, then cook over the stove top with extra virgin olive oil, lemon juice, and salt and pepper. When the Brussels sprouts begin to brown, add corn and mix together until corn is cooked through. Serve hot with fish or chicken. See the tasty results above!

Spicy Lime Corn on the Cob – Prepare 4 ears of corn for grilling. Before transferring to the grill, mix together 2 tablespoons of lime juice, 1 teaspoon of lime zest, 1 teaspoon of chili powder, and 1 teaspoon of salt. Brush the mixture over the corn and grill until corn is tender and a little charred.

Corn Quinoa with White Beans, Tomatoes, and Basil – Cook quinoa according to directions. Meanwhile, add whole grape tomatoes to a skillet and cook in a little extra virgin olive until the skin starts to blister. Add corn and cook until it is warmed, then set aside. Next, drain a can of white beans, rinse, and add to the skillet. Mix all ingredients together with the quinoa. Top with basil and serve.
