Healthy Zucchini Ideas

Zucchini is a type of summer squash, which makes it an August Foods of the Month! In August, be sure to include zucchini in your diet since this is the time when it is in its peak harvesting season. If you have never tried zucchini before, we recommend adding it to your meals with these simple substitutions. 

Zucchini Tacos – In addition to your favorite healthy veggies, add diced zucchini pieces to add flavor and color to tacos. Use your stove to cook a mixture of tomatoes, onions, garlic, chiles and zucchini. Then add black beans and a little goat cheese for a truly tasty meal.

Baked Zucchini Chips – Instead of regular potato chips, consider making your own baked zucchini chips. To make this healthy alternative, simply slice one zucchini into small rounds, then dip them into a mixture of skim milk, whole wheat bread crumbs, grated parmesan cheese and salt and pepper. Lay the chips on a cookie sheet and cook in the oven for 30 minutes at 425 degrees.

Zucchini Tartine – As a healthy snack, spread a little ricotta cheese on a slice of whole wheat baguette, then top with thin pieces of zucchini. Sprinkle with salt, pepper, a little rosemary, and a squeeze of lemon juice.

Mini Zucchini Pizzas – Make a fun afterschool snack by slicing zucchini into small rounds. Grill or broil for several minutes until the zucchini begins to soften. Remove from the oven and top with tomato sauce and low-fat mozzarella cheese. Continue to broil until the cheese begins to bubble and serve hot.Zucchini Pizzas
