Spicy buffalo cauliflower is a healthy take on fried buffalo chicken wings. The best part about both of these treats is the spicy kick you get when you eat them! It really doesn’t matter whether or not it’s a veggie covered in spicy sauce or chicken, in our opinion. The great thing about this recipe is that since the cauliflower is less filling and greasy than fried chicken, you can eat lots more of it. And you can feel great about eating these tasty buffalo cauliflower bites because they are loaded with fiber and Vitamin C and are very low in fat. Serve with some carrots and celery during your upcoming Super Bowl Party for a delicious veggie plate!

Ingredients
  1. 1 large head of cauliflower, cut into florets
  2. 1 tbsp. extra virgin olive oil
  3. Salt and pepper, to taste
  4. 1 tbsp. coconut oil
  5. 1/4 cup hot sauce
  6. 1 tsp. garlic powder
  7. 1 tbsp. flour
Instructions
  1. Preheat oven to 425 degrees.
  2. Place cauliflower florets on to a baking sheet lined with parchment paper. Bake for 20 minutes.
  3. Meanwhile, melt the coconut oil over medium heat on the stovetop. Once melted, mix in the hot sauce and the garlic powder. Stir to combine, then set aside.
  4. After the cauliflower has finished cooking, let it cool then transfer to a plastic bag, Add the hot sauce mixture and shake to coat the cauliflower.
  5. Return cauliflower to baking sheet, then cook for an addition 5 minutes.
  6. Serve hot, with blue cheese dressing and veggies on the side.

  2. Splash of vanilla extract
  3. 1 tsp. honey
  4. 1/4 cup skim milk
  5. 1/4 cup plain Greek yogurt
  6. 5 ice cubes

Mexican Spinach Dishes

Mexican food is a favorite amongst The OrganWise Guys. Enjoy healthy Mexican food ingredients like black beans, avocados, onions and tomatoes with whole grain tortillas, lean meats, and low fat cheeses to make a nutritious meal!

In May, Spinach is a Foods of the Month. Read below for our favorite Mexican dishes, made healthier with lots of iron and other vitamins and minerals from adding a serving of spinach.

Spinach Quesadillas – Spread a thin layer of low-fat shredded Mexican cheese on a whole grain tortilla, top with 1/3 cup cooked spinach (to cook, boil spinach for about 2 minutes, until it becomes wilted). Add a tablespoon of tomato salsa. Fold the tortilla in half and cook until browned and cheese is melted.

Spinach Veggie Burrito -First, check out our favorite Mexican burrito recipe. Then, simply add 4 cups fresh spinach to the veggie mixture at the very end of cooking and stir until wilted for even more nutrition!

Creamy Spinach Enchiladas РCook chopped onion over medium heat in a bit of olive oil until soft. Add garlic and cook until it begins to brown. Next, add 8 cups fresh spinach leaves and cook until they become wilted. Add in your favorite Mexican flavors like lime, low-sodium seasoning and cumin. Next, add one 4.5 oz. can green chiles and stir all ingredients together. Remove from heat and mix 1/2 cup nonfat plain Greek yogurt with the spinach mixture. Spread out whole wheat tortillas and add about 1/3 cup of the mixture to each tortilla and roll up, seam side down. When finished filling up a baking dish with the enchiladas, top with low-fat shredded Mexican cheese and 1 can of green chile sauce. Cook at 400 degrees for 20 minutes, or until cheese is bubbly.
