This pumpkin yogurt is not only tasty, it also contains an October Foods of the Month! By combining pumpkin with rich Greek yogurt, you get a satisfying treat that reminds us of fall.
Halloween Pumpkin Yogurt
1/4 cup canned pumpkin (not canned pumpkin pie mix)
1/2 cup nonfat plain Greek yogurt
1/2 tsp vanilla extract
1 tbsp chopped nuts
1/2 tsp honey
1/8 tsp cinnamon (optional, but we love it!)
Sprinkle of nutmeg (optional)
- Combine the canned pumpkin and the Greek yogurt in a bowl.
- Add vanilla extract, honey, and cinnamon. Mix all ingredients together. (The mixture should be light orange.)
- Add a dollop of Greek yogurt on top, and sprinkle with the chopped nuts and nutmeg. Enjoy this simple recipe as a snack!
