Creamy Broccoli Soup – In a large pot, cook 1 chopped onion in extra virgin olive oil until it begins to soften, about 5 minutes. Add 2 cups low sodium vegetable broth, 1 bunch broccoli florets, 1 cup russet potato pieces, 2 cups water, and salt and pepper to taste. Simmer until veggies are tender (about 20 minutes). Blend all ingredients together and top with reduced-fat cheddar cheese.
White Bean, Chicken and Spinach Soup – Grill chicken, shred, and set aside. Cook sliced garlic in extra virgin olive oil in a large pot, until it begins to brown. Add 6 cups low-sodium chicken broth, 1 can cannellini beans (rinsed), and 2 cups fresh spinach leaves. Add grilled chicken, and simmer for 10 minutes.
Creamy Cauliflower Soup with Garlic – Cook sliced garlic in extra virgin olive oil in a large pot, until it begins to brown. Add 1 small head of chopped cauliflower to the pot along with 5 cups of low-sodium chicken broth, salt, pepper and thyme and simmer until the cauliflower is tender (about 20 minutes). Blend all ingredients together and top with additional garlic (optional). Here is the final product!
