Transfer veggie mixture to a bowl to cool. Add thawed shrimp to the same pan you used for the veggies and cook until the shrimp is pink and firm. Combine shrimp with the veggies, and transfer to one side of a whole wheat tortilla. Sprinkle with pepper jack cheese and cilantro.
