Baked Root Vegetable Fries

Turnips, a root vegetable, are a December Foods of the Month. Have you ever eaten a turnip? These root veggies stand out because of their bright purple skin. When peeled and baked or roasted, turnips give any meal a seasonal and hearty feel. Next time you are at the supermarket, don’t overlook them! Read on for our easy Baked Turnip Fries recipe.

5 medium turnips
1 tbsp extra virgin olive oil
1 tsp onion powder
1 tsp ground paprika
Salt and pepper, to taste

Directions

  1. Preheat oven to 425 degrees F. Spray a large baking sheet with non-stick cooking spray.
  2. Peel the turnips and cut into 2 inch long sticks.
  3. Combine extra virgin olive oil, onion powder, paprika, salt and pepper in a gallon-size sealable bag (or in a large bowl). Add turnips and toss to coat them with the oil mixture.
  4. Place turnips in a single layer on a baking sheet, and bake 15-20 minutes until they are tender and golden brown.
