Bean Salads

On nights that you don’t have time to cook meat, consider using beans as your protein source. Dried beans and peas like chickpeas, black beans, and lentils are a good source of protein and dietary fiber. Start off 2014 healthy with these salad ideas, all of which contain dried beans and peas, a January Foods of the Month! Here are our favorite OrganWise bean salads:

Black Bean and Avocado Salad – Cut an avocado in half and remove the seed. Fill with black beans, cilantro, tomatoes and cut up mango pieces. Serve the salad right out of the avocado skin for a beautiful presentation and tasty appetizer.

Super Spinach Bean Salad – Make a quick salad with spinach, chick peas, canned tuna (drained), chopped tomatoes, peppers, and onions  for a high protein, vitamin packed meal that will keep you full throughout the day.

Lentil and Chickpea Veggie Salad – Combine 1 cup cold lentils with 1 15 oz. can of chickpeas, drained. Add shredded carrots, chopped green and red peppers and mix with a little bit of extra virgin olive oil and salt and pepper. Easy and tasty!
