Quick and Easy Garlic Broccoli Pasta – Cook whole wheat penne and set aside. Cut 1 head of broccoli into florets and steam in the microwave (put 3 tbsp. water in a microwave safe bowl, add florets, cover, and cook for 3 minutes, until tender). Sautee 3 minced garlic cloves in extra virgin olive oil. Mix broccoli, pasta, and garlic together and serve with Parmesan cheese, salt and pepper.
Turkey Sausage and Broccoli Pasta – Cook your favorite whole wheat pasta according to directions and set aside. Meanwhile, add turkey sausage to the stove top and cook on medium high heat, breaking it up with a spoon until it’s thoroughly cooked. Stir in 2 minced garlic cloves and cook for 1 more minute. Add 2 cups low-sodium chicken broth, and 1 bunch broccoli rabe to the stove, and cook for 3-4 minutes, until the broth begins to simmer. Add pasta and serve with a sprinkle of Parmesan cheese.
Lemon Broccoli Pasta with Chicken – Cook whole wheat pasta and set aside. Meanwhile, use your stovetop to cook 2 large chicken breasts, seasoning with lemon juice, salt and pepper. Shred chicken and set aside. Using the same pan as you cooked the chicken, sautee 2 garlic cloves in extra virgin olive oil. Add 1 head of broccoli florets, 1 cup low sodium chicken broth, and simmer for 10 minutes. Mix broccoli, chicken and pasta together with the juice and zest of 1 lemon.
