Root vegetables are a December Foods of the Month. These veggies get their name because we are eating the root of the vegetable. Did you know that one cup of raw carrots provides more than 400% of the daily recommended value of Vitamin A, an important antioxidant for keeping our bodies healthy?
To get your carrot fix, try this healthy (and incredibly beautiful) carrot and raisin salad for a snack or side dish during the upcoming holidays.
