Chicken breasts offer the perfect, easy weeknight meal solution. Buy chicken breasts when they are on sale (click here for budgeting tips) and store in the freezer for quick access. Here are our favorite ways to serve chicken breasts in under 20 minutes:
Chicken Salad with Avocado – Make this staple meal healthier by switching mayonnaise for avocado! Mix diced chicken breast, celery, onion, salt, pepper, low-fat sour cream and avocado together for the most perfect and filling chicken salad. Eat with a fork or serve it warm on whole wheat bread (use a sandwich press) with sliced tomatoes and a side salad for a filling dinner.
Chicken Wrap with Green Beans – Place low-fat cheddar cheese (shredded) on the bottom third of a whole wheat sandwich wrap. Top with cut up grilled chicken breast, tomatoes, sliced red onion, and chopped green beans. Fold the left and right side of the wrap in, then carefully roll up the wrap, starting at the bottom. Use a sharp knife to cut the wrap in half. This makes the perfect, kid-friendly weeknight meal.
Whole Wheat Burritos with Chicken – Serve healthy burritos for dinner with this simple recipe. Start with a whole wheat tortilla. Sprinkle low-fat Mexican style cheese over the bottom third of the tortilla. Then add diced grilled chicken, cooked black beans, tomato salsa, guacamole and low-fat sour cream. Carefully, fold the left and right side of the tortilla in, then roll up the tortilla starting at the bottom. Transfer the rolled burrito to a sandwich press or to a skillet on medium heat. Cook until the tortilla becomes crispy. Serve immediately. The ingredients can also be stored in the refrigerator for several days for leftovers.
