Colorful Spinach Salad

Here’s a great salad idea that can be used for a fast lunch or a healthy dinner side.


1 bag of spinach, washed and drainedSpinach_salad

½ cup sliced almonds

¾ cup dried cherries

2 oz goat cheese, or feta cheese, crumbled

Your favorite low-fat vinaigrette dressing (to taste)



  1. Put the spinach, almonds, cherries, and cheese in a bowl.
  2. Pour some vinaigrette dressing on top, and toss/mix gently.
  3. Serve in salad bowls immediately for an appetizer, side salad, or light lunch.
