Corn on the Cob for Dinner Tonight!

Who doesn’t love corn on the cob as side to a healthy BBQ meal? Corn also happens to be a July FoM so we are celebrating this bright and tasty veggie!
 
We love grilled corn on the cob; it is the perfect summertime treat! If you have never prepared corn on the cob yourself, read on for step-by-step instructions.
 
Step 1: Clean the ears of corn. Cut off the excess silk from the ends (that’s the silky tuft at the top of the corn) and remove any loose husk (the green part), keeping the remaining husks intact.
 
Step 2: In a large pot, submerge the each ear of corn entirely. This provides more moisture when cooking, so the corn does not become dry. Let the ears of corn soak for about 15 minutes before you begin to cook them.
 
Step 3: Prepare the grill while the corn is soaking.
 
Step 4: Remove the corn from the water and pour out any excess liquid.
 
Step 5: Place the corn on the grill (medium high heat) and cover it. Turn the corn once every 10 minutes. If you are using a gas grill, turn the ears every 5 minutes. If you don’t turn the corn enough, it will burn!
 
Step 6: Grill until the outer green husks become completely browned. Remove the corn from the grill with tongs. Be careful!
 
Step 7: Use a dish towel to peel back the remaining silk and leaves, from the top down. They should all come off in one piece. If the corn is too hot, you can do this step under warm running water.
 
Step 8: Rinse the cooked corn under warm water to remove any excess ash or silk.
 
Step 9: Your corn is done! Add healthy, low-fat toppings like spices and a little salt and pepper. Our personal favorite is spicy – a little lime juice, chili powder, and cilantro. YUM!
