Creamy Crunchy Veggie Dip

This festive recipe is a healthy snack for all of your little Olympians! 


1 package low-fat cream cheese
1 green pepper, diced
1 red pepper, diced
1 jalapeño pepper, seeded, diced
1 8 oz. can of corn, drained
2 tbsp cilantro (optional)
Whole grain triscuits/woven wheat crackers and baby carrots, for serving


  1. Put cream cheese in a bowl, add the peppers and corn (be careful about touching the membranes of the jalapeno).
  2. Mix together well, using a spoon.
  3. Add cilantro as a garnish and serve with whole grain triscuits or baby carrots.

Makes 7 servings
