Do You Like Avocados?

Have you ever eaten an avocado? Avocados are a good fat, which are one of the February Foods of the Month. This creamy green vegetable adds so much flavor to a dish. You can simply add an avocado slice to top off your favorite sandwich (it is a great substitute for mayonnaise), add them to salads, make guacamole … the possibilities are endless! Black Bean and Avocado Salad – Cut an avocado in half and remove the seed. Fill with black beans, cilantro, tomatoes and cut up mango pieces. Serve the salad right out of the avocado skin for a beautiful presentation and tasty appetizer.

Greek Avocado Salad Sandwiches – Mix chunks of avocado with red onions, tomatoes, cucumbers, oil and vinegar and salt and pepper. Sprinkle in a little bit of feta cheese and serve on whole grain toast.

Egg and Avocado English Muffin – For an on-the-go breakfast sandwich, substitute avocado for meat and/or cheese. Cook an egg any way you like, then add sliced avocado to a toasted whole grain English muffin.

Guacamole-BruschettaGuacamole Bruschetta – Mash two ripe avocados with chopped red onion, cilantro, lime juice, and salt and pepper. Top toasted whole grain bread slices and serve for an unusual bruschetta dish that is packed with good, healthy fats!
