One of the Foods of the Month for September is tomatoes. There are so many creative things you can do with this vegetable, but one of them particularly sticks out in our minds. Roasting tomatoes is a top way in our books to prepare this veggie! You can roast any type of tomato, but we think cherry or grape tomatoes work best since you can savor these treats in bite-size portions.
Have you tried a roasted tomato before? If so, you know that when roasted, all of the delicious tomato flavors are enhanced. If you have never roasted tomatoes before and are curious, it’s very simple! Lay washed and dried grape tomatoes in a baking dish, drizzle with extra virgin olive oil and top with salt. Roast in the oven at 425 degrees for 10 minutes, or until the tomatoes skin begins to split.
Roasted tomatoes can be eaten plain or with a little Parmesan cheese on top. We added our roasted tomatoes to a whole wheat pasta dish with broccoli and garlic. How would you eat them?
