Grapefruit and Shrimp Salad – Citrus fruits and fish are a great combination. Next time you make a salad, use spinach leaves, then add grilled shrimp and grapefruit slices. Add some avocados for good fat, and top with your favorite vinaigrette dressing.
Lime Yogurt Popsicles – For a refreshing treat, blend together 1 cup skim milk, 1 cup low-fat vanilla Greek yogurt, the juice of 4 limes, and the zest from 3 limes. Pour into popsicle molds, freeze and enjoy!
Orange and Lemon Chicken – Marinade chicken breasts overnight in a mixture of fresh lemon and orange juices, olive oil and garlic. The next day, grill the chicken breasts. Add orange and lemon slices to the grill. Pour the remaining marinade on top of the chicken and citrus slices and top with parsley.
