Eat More Sweet Potatoes

What is your favorite healthy sweet potato dish? Since sweet potatoes are a November Foods of the Month, now is the perfect time to eat more of these vitamin A filled veggies!
Don’t be fooled into thinking that the only way to eat sweet potatoes is with marshmallows on top (like a popular Thanksgiving dish). These veggies taste like dessert all by themselves, hence the name “sweet” potatoes! Check out our tips for incorporating more of these tasty veggies into your diet.

Simple Roasted Sweet Potatoes – Cut up sweet potatoes into thin, slices, add sliced onions, and place in roasting pan. Drizzle extra virgin olive oil and sprinkle some salt on top, then roast in the oven at 400 degrees for 25 minutes. Roasting sweet potatoes definitely bring out the “sweet!”

Mexican Sweet Potatoes – Bake a sweet potato in the oven, then top with your favorite Mexican inspired ingredients like black beans, cilantro, low-fat pepper jack cheese, and low-fat sour cream.

Baked Sweet Potato “Fries” – Cut sweet potatoes into thin sticks, drizzle with olive oil, then top with paprika and red pepper flakes. Bake in the oven at 400 degrees for 10-15 minutes, until golden brown. Serve with your favorite healthy condiments as a healthy side dish to lunch or dinner.

Pasta with Roasted Sweet Potatoes – Cook whole wheat pasta according to directions. Cut sweet potatoes into small pieces and roast until golden brown.
