Zucchini is a type summer squash, which happens to be an August Food of the Month (FoM). Summer months are the best time to check your grocery store for zucchini (found in the produce section) because this green veggie is the most fresh!
Looking for ways to add this FoM to your diet? So were we! Check out these 5 tips for cooking with zucchini, all of which are sure to be a hit:
Zucchini Guacamole – Substitute ½ of a large zucchini for 1 avocado when making guacamole. Simply chop zucchini into small pieces and microwave for 4 minutes. Add to your favorite guacamole dip to lighten up the fat and add more nutrients.
Zucchini Mini Pizzas – Make a fun afterschool snack by slicing zucchini into small circles and topping with tomato sauce and low-fat mozzarella cheese.
Zucchini Sticks – Keep it simple and cut zucchini into dipping size sticks and serve with your favorite low-fat dips instead of crackers.
Zucchini Boats – Cut a zucchini the long way, scoop out the insides, chop them, then combine with your favorite lean meats, low-fat cheeses, and/or veggies. Cook in the oven at 350 degrees for 25 minutes and enjoy. We added tomatoes and low-fat cheese to our zucchini boats and it was tasty (see below).
