Grilled Salmon with Pineapple Mango Salsa
Ingredients
For the Salmon
2 lbs. salmon with skin, cut into 4 pieces
2 tbsp. extra virgin olive oil
Salt and pepper, to taste
For the Salsa
2 (1/2-inch thick) slices of fresh pineapple, cut into small cubes
1 mango, peeled and cut into small cubes
1/2 small red onion, chopped
1/2 jalapeno, seeded and chopped
2 tbsp. cilantro, chopped
Juice of 1 lime
Sprinkle of salt
Directions
For the Salmon
- Heat grill to medium-high.
- Rinse and pat dry the salmon filets. Drizzle with extra virgin olive oil and sprinkle with salt and pepper.
- Brush the grill grate with oil. Place the salmon with the skin facing down on the grill and cover.
- Cook the salmon for about 15 minutes until the flesh flakes easily. Use a spatula to remove the fish from the grill.
For the Salsa
- Toss together the pineapple, mango, red onion, jalapeno, cilantro, lime, and salt. Let the mixture sit for about 15 minutes to allow the flavors to blend.
- Top salmon filets with the salsa and serve.
