Grilled Salmon with Pineapple Mango Salsa

Grilled Salmon with Pineapple Mango Salsa

Ingredients

For the Salmon

2 lbs. salmon with skin, cut into 4 pieces
2 tbsp. extra virgin olive oil
Salt and pepper, to taste

For the Salsa

2 (1/2-inch thick) slices of fresh pineapple, cut into small cubes
1 mango, peeled and cut into small cubes
1/2 small red onion, chopped
1/2 jalapeno, seeded and chopped
2 tbsp. cilantro, chopped
Juice of 1 lime
Sprinkle of salt

Directions

For the Salmon

  1. Heat grill to medium-high.
  2. Rinse and pat dry the salmon filets. Drizzle with extra virgin olive oil and sprinkle with salt and pepper.
  3. Brush the grill grate with oil. Place the salmon with the skin facing down on the grill and cover.
  4. Cook the salmon for about 15 minutes until the flesh flakes easily. Use a spatula to remove the fish from the grill.

For the Salsa

  1. Toss together the pineapple, mango, red onion, jalapeno, cilantro, lime, and salt. Let the mixture sit for about 15 minutes to allow the flavors to blend.
  2. Top salmon filets with the salsa and serve.
