Healthy Peach Cobbler

Summer time is the perfect time to enjoy peach cobbler for dessert. In these warm months, stone fruits like peaches (an August Foods of the Month) are in their peak season making them popular in grocery stores. These fruits are full of nutrients to help lower cholesterol and are high in vitamins and minerals like vitamin C and potassium. When planning your next grocery list, include fresh peaches to make this healthier version of a traditional peach cobbler!

Healthy Grilled Peach Cobbler

Ingredients

2 peaches, halved and pitted
1 cup reduced-fat granola
2 tsp. brown sugar
1/2 tsp. ground cinnamon
2 cups reduced-fat vanilla frozen yogurt or non-fat vanilla Greek yogurt

Directions

  1. Sprinkle the brown sugar and cinnamon over the cut side of the peaches.
  2. Place peaches cut side down on a lightly oiled grill or grill pan. Grill over medium high heat for 10 minutes or until the peaches are tender. Or, if you do not have a grill you can broil the peaches cut side up in the oven for about 10 minutes until tender.
  3. Place peach halves in dessert bowls. Serve with the yogurt and granola.
