Have you eaten spaghetti squash before? This veggie gets its name because it looks like spaghetti, but that is where the similarities end! Spaghetti squash has a tasty flavor and goes well with lots of other vegetables. We recommend making this spaghetti squash recipe for a dish full of flavor and nutrition!
Ingredients
1 spaghetti squash, halved lengthwise and seeded
1 tbsp. extra virgin olive oil
1 small red onion, chopped
1 clove garlic, minced (or 1 tsp. prepared, minced garlic)
1 large tomato, chopped
¾ cup crumbled reduced fat feta cheese
2 tbsp chopped fresh basil
Directions
- Preheat oven to 350 degrees. Spray a baking sheet with non-stick spray.
- Place spaghetti squash cut sides down on the prepared baking sheet, and bake 30 minutes in the preheated oven, or until a sharp knife can be inserted with only a little resistance. Remove squash from oven, and set aside to cool enough to be easily handled.
- Meanwhile, heat olive oil in a skillet over medium-high heat. Sauté onion in oil until tender. Add garlic, and sauté for 2 to 3 minutes. Stir in the tomatoes, and cook until tomatoes are warm.
- Use a large spoon to scoop the stringy pulp from the squash, and place in a medium bowl. Add the sautéed vegetables, feta cheese, and basil to the bowl, mix together, and serve warm. Check out the final product!
