Did you know that hummus is made with chickpeas, which are a January Foods of the Month? Tasty hummus makes a great dip for your favorite raw veggies like peppers, carrots, cucumbers and broccoli! Make this quick and easy hummus dip and serve as a healthy afterschool snack this week.
1 can (19 oz.) chickpeas (garbanzo beans), drained and rinsed
3 garlic cloves (or 3 tsp. already minced garlic)
1/4 cup nonfat plain Greek yogurt
1 tbsp. fresh lemon juice
1 tsp. extra virgin olive oil
1/4 tsp. salt
1/4 tsp. pepper
Cut up veggies, for dipping
1. Put all ingredients into a food processor and blend until smooth.
2. Serve at room temperature with whole wheat pita chips, whole grain crackers, and your favorite dipping vegetables (try cruciferious ones!).
