July 31st is National Avocado Day so celebrate this delicious food that is full of good fats. The creamy texture of avocados make them decadent and versatile, all while being healthy too! Consider adding avocado to your lunch this month, here are a few of our favorite, fast ways to eat avocados!
Avocado Egg Toast – Cook 1 egg any way you like (we prefer scrambled or over easy). Meanwhile, toast one piece of whole grain bread. Cut an avocado into thin slices, top the toast, then add the egg on top. Also add tomatoes and low-fat cheese if you please.
Whole Wheat Pita Pizza with Avocado – Mash up one avocado and season with lime juice, salt and pepper to use as your pizza “sauce.” Next, spread a thin layer of the avocado mixture over the pita. Then add pepper jack cheese, tomato, cilantro and diced chicken (optional). Broil in the oven until the cheese begins to bubble and serve.
Avocado Chicken Salad – Sub out mayonnaise for creamy avocado! Mix diced chicken breast, celery, onion, salt, pepper, low-fat sour cream and avocado together for the most perfect and filling chicken salad. Eat with a fork or on whole wheat bread.
