OrganWise Nut Nuggets

Nuts, an April Foods of the Month, are a versatile food. They can be eaten alone or mixed in with other ingredients for tasty snacks. We recently discovered the option of making “nut nuggets” – small rolled balls containing nuts, dried fruits, oats, and peanut butter to hold everything together. Not only are these nut nuggets delicious, but they also come in the perfect kid-friendly size. Even better, these are so easy to make that you can involve your kids in the process. Remember, these nuggets are definitely delicious but you should limit your serving size to 1 nugget at a time. Here are some of our favorite combinations to get you started.

Note: For all the recipes below, combine 1/4 cup honey, 1/4 cup all natural peanut butter, 1 cup whole oats with a dash of vanilla extract and cinnamon to create your “base” for these nut nuggets. Then use an ice cream scooper to form small balls about 1 inch big. The toppings and combinations are endless!

Simple Honey Nut Nuggets –  Roll nut nuggets in crushed peanuts (no salt added) and drizzle with a little bit of honey. Refrigerate for 30 minutes then enjoy!

Fruity Nut Nuggets – Roll nut nuggets in chopped dried cranberries and chopped pistachios then refrigerate for 30 minutes. During the holidays, these also make a festive treat for their red and green colors!

Peanut Butter and Coconut Nuggets – Roll nut nuggets in unsweetened coconut flakes then refrigerate for 30 minutes. These nuggets look beautiful with their white toppings.

Dark Chocolate and Hazelnut Nuggets – Chop up 2 tbsp. dark chocolate and mix with 2 tbsp. chopped hazelnuts. Roll the nut nuggets in the mixture then refrigerate 30 minutes to let the toppings set.
