Sweet potatoes are a November Foods of the Month! These veggies have one of the highest amounts of beta-carotene, which is where they get their pretty orange color. Instead of regular french fries, have baked sweet potato fries! Not only are these “fries” truly tasty, they also have high amounts of vitamin A, an antioxidant that boosts our immune system. This easy recipe is sure to be a hit!
Oven Baked Sweet Potato Fries
Ingredients
1 large sweet potato, peeled and cut into wedges
2 tsp. olive or canola oil
1 tsp. dried herbs (rosemary, parsley, thyme, or a mixture)
1/4 tsp. salt
Pinch of cayenne pepper
Directions
- Preheat oven to 450°.
- Toss sweet potato wedges with oil, herbs, salt and pepper (or use a plastic bag like the picture below).
- Spread the wedges out on a rimmed baking sheet. Bake until browned and tender, turning once, about 20 minutes total.
