Cheesy pasta … What a perfect comfort food! Unfortunately, a super-cheesy pasta dish may not be so good for our bodies. The good news is, there are many ways to make these dishes OrganWise! In honor of one of the February Foods of the Month (low-fat dairy) may we present to you some cheesy, gooey, tasty pasta dishes, lightened up to make your stomach and your body happy?!
Roasted Veggie Ziti – Cook whole wheat ziti according to direction and set aside. Roast your favorite veggies (we like cherry tomatoes, broccoli, onions and peppers) in some extra virgin olive oil and salt. When finished, toss the pasta, veggies, and 1 package of low-fat ricotta cheese together. Sprinkle with low-fat mozzarella cheese and bake until cheese is gooey.
Spinach and Cheese Pasta with Lemon – Cook your favorite whole wheat pasta. When finished, drain, and set aside. Use the same pot you used to cook your pasta and add extra virgin olive oil and a package of fresh spinach leaves. Turn your stove to low, and cook the spinach until it becomes wilted. Squeeze lemon juice, salt and pepper onto the spinach, then add the drained pasta back to the pot. Stir in your favorite low-fat cheese and serve immediately.
Healthy Lasagna – Make your favorite lasagna, but be sure to add lots of veggies to your sauce, and a layer of spinach to really make this dish nutritious! Use low-fat ricotta and mozzarella cheese for a delicious and healthy meal.
