Pasta and peppers go great together! In June, celebrate all sorts of peppers by including them in your pasta dishes. Loaded Veggie Orzo Salad – Cook whole wheat orzo (or another small pasta shape) according to directions. Drain and let cool. Meanwhile, mix together chopped red peppers, sun dried tomatoes, basil, red onion, fresh spinach leaves and feta cheese. Mix these ingredients with the orzo. Let it sit in the refrigerator for 2 hours and serve chilled. Perfect for your next summer barbecue!
Colorful Pepper Pasta – For a kid-friendly, colorful meal, cook whole wheat ziti, then add thin sticks of red, yellow and green peppers. Add chopped fresh parsley and parmesan cheese if you like.
Spaghetti with Peppers and Turkey – Cook whole wheat spaghetti according to directions, set aside. Meanwhile, use a large pan to cook low-fat ground turkey (or turkey sausage) on your stovetop on medium-high heat. When brown, add in 3 yellow peppers, cut into thin sticks and cook on low heat until the peppers soften. Finally, chop up 2 cups of arugula. Mix the turkey and arugula and pasta for a colorful, healthy meal that tastes great for leftovers, too!
