Low-Fat Cream Cheese Sandwich Snacks

salmon and cream cheese snacksIn February, low-fat dairy Foods are a Foods of the Month. Low-fat cream cheese shouldn’t be reserved for just bagels; it’s a great source of calcium to spread on your favorite sandwiches and tastes delicious when paired with lean meats, vegetables and fish. Cut up sandwiches (made on whole grain bread) into 4 pieces (like in the photo below) for the perfect snack. Here are our favorite sandwich snacks, all made with low-fat cream cheese.

Turkey with Dill Cream Cheese and Cucumbers – Spread a thin layer of low-fat cream cheese onto whole wheat bread. Top with a sprinkle of fresh dill (optional). Layer 6 cucumber slices on top of the cream cheese, then add low-sodium turkey breast). Top with the 2nd slice of bread and serve.

Veggie Bagel with Cream Cheese – Spread a thin layer of low-fat cream cheese onto a toasted whole wheat bagel or bagel thin. Add big slices of tomato, cucumber, and chopped onion. Sprinkle with a little bit of pepper. Cut in half and serve.

Salmon and Cream Cheese on Whole Wheat – Spread a thin layer of low-fat cream cheese onto toasted whole wheat bread. Top with 2 slices of smoked salmon, lemon juice, and salt and pepper and the 2nd slices of bread. Cut into 4 pieces and serve.

 

Slow Cooking with Low-Fat Dairy

tortellini soupSlow cookers are the best in the winter months for creating a hot meal with little effort. In February, low-fat dairy is a Foods of the Month. Using low-fat dairy, like skim milk and low-fat cheeses, in a slow cooker is a great way to create filling and nutritious meals. Simply pick up ingredients from the store, put them in the slow cooker, and wait a few hours for your meal to be ready. Here are some of our favorite recipes for the slow cooker, all of which include low-fat dairy.

Lightened Up Super Bowl Recipes

We shared these recipes last year, but thought they were yummy enough to share again!

The big game is this weekend and undoubtably you are either having a Super Bowl party or attending one. Whether you are hosting or bringing a dish to a friend’s gathering, you can actually make some really tasty AND healthy foods so you aren’t totally indulging for the entire four hours of entertaining football and commercials! Try some of these lightened up versions of your favorites for a more guiltless Super Bowl Sunday!

Vegetable Wrap Ideas

In January, we celebrate all things healthy with cruciferous vegetables and dried beans and peas as The OrganWise Guys Foods of the Month. What’s better than a meal with one Foods of the Month? A meal with BOTH Foods of the Month! We created some tasty vegetable wraps for lunch this month using broccoli (a cruciferous vegetable) and kidney beans (a type of dried bean).

Favorite Slow Cooker Soups

Legumes, a January Foods of the Month, make the best base for soups. This time of year, when the temperates are chilly, is the best time to bring out your slow cookers and enjoy a bowl of hearty soup. Whether it’s for a Sunday football party or an easy weekday meal, these are our favorite slow cooker soup recipes.

black bean chicken soupChicken and White Bean Soup – Place 2 uncooked chicken breasts at the bottom of your slow cooker. Add 6 cups low-sodium chicken broth, 2 15 oz. cans of Great Northern beans, 2 cups store bought salsa verde, and 2 tsp. cumin. Cook on low for 6-8 hours or high for 3-4 hours. Remove chicken, shred, and return to slow cooker. Serve with low-fat sour cream and avocado.

“Hardy” Beef Chili – Dice one onion and one green pepper, then cook in olive oil over medium heat in a large pot. Add 4 chopped garlic cloves. Next, add 1 lb. of ground beef, crumbled. Mix the meat and veggies together until cooked through, about 10 minutes. Add 1 6 oz. can of tomato paste, 1 15 oz. can of kidney beans, 1 15 oz. can of canellini beans, and 1 28 oz. can of diced tomatoes, with the juices. Add 2 cups vegetable broth and red pepper flakes, cumin, salt and pepper, to taste. Let simmer for one hour, stirring occansionally. Serve with your favorite toppings like low fat cheese, avocado, cilantro and green onions.

Black Bean Chicken Soup – Place 2 uncooked chicken breasts at the bottom of your slow cooker. Add 3 cups low-sodium chicken broth, 1 15 oz. cans of black beans,1 15 oz. cans of corn, 2 cups store bought mild tomato salsa, and 1 package low-sodium taco seasoning. Cook on low for 6-8 hours or high for 3-4 hours. Remove chicken, shred, and return to slow cooker. Serve with low-fat sour cream, low-fat cheddar cheese and whole wheat tortilla chips.
