Tuna Meals on a Budget

Happy March! This month, fish is a Foods of the Month. Canned tuna fish is a budget-friendly staple to have on hand in your kitchen. Instead of making your typical tuna salad with canned tuna, make creative tuna meals. Here are our favorite canned tuna meals that don’t seem like they came from a regular can of tuna. These meals are both budget-friendly and OrganWise!

Whole Grain Lemony Rice with Tuna and Spinach – Cook 3/4 cups whole grain rice in 2 cups chicken broth over medium-high heat until boiling. Reduce to a simmer and cook for 30 minutes until the rice is done. Add 1 can tuna packed in water (drained) 2 cups spinach leaves, and the juice of 1/2 lemon. Cook for an additional 5-10 minutes, until the spinach is wilted. Season with salt and pepper, to taste, and serve.

Guacamole Tuna Salad – Use a fork to mash 1 avocado and add 1 can of tuna packed in water (drained). Mix together and add 1 small tomato, chopped, and 1 tbsp. chopped red onion. Season with salt and pepper. Serve on whole grain bread or lettuce.

Tuna Patties – Mix together the contents of 2 packages of tuna packed in water (drained) with 3 crushed whole wheat crackers, 1 tsp. dijon mustard, 1/4 cup chopped onion, 1 tbsp. chopped red pepper, and salt and pepper. Add 1 egg and continue to mix ingredients until all ingredients are combined. Use your hands to form patties out of the tuna mixture. Cook patties in 1 tbsp. extra-virgin olive oil on medium heat for 2 minutes on each side, until golden brown. Serve on whole grain buns with your favorite fixings.
