What is a pizzalad, you ask? It is a cross between a pizza and a salad! Our favorite pizzalads are made with whole grain crust, of course! Pizzalads are a yummy way to load up your favorite pizzas with veggies. We think these combinations are especially tasty:
Caprese Pizzalad – Drizzle a little extra-virgin olive oil onto your pizza dough, then add chopped garlic, low-fat mozzarella cheese, and cherry tomatoes. Bake in the oven at 500 degrees for 12-15 minutes, until crust is crispy. Meanwhile, toss 1 package of arugula with 2 bunches of cut up basil leaves and your favorite vinaigrette. When the cheese on your pizza base is bubbling, remove from oven and top with the salad. Serve hot.
Veggie Loaded Pizzalad – Drizzle pizza dough with extra-virgin olive oil, then top with your favorite chopped veggies for roasting (we like cherry tomatoes, eggplant, broccoli and onions). Cook the pizza in the oven at 425 degrees for about 15-20 minutes, until the veggies begin to brown. Meanwhile toss 1 package of fresh spinach leaves with low-fat shredded provolone cheese with balsamic vinaigrette and pepper, to taste. Remove the pizza from the oven, then top with the salad mixture.
Low-fat Chicken Sausage Pizzalad – Drizzle extra-virgin olive oil onto the pizza dough, and add slices of fresh mozzarella cheese and tomatoes. Bake in the oven for 12-15 minutes at 500 degrees. While the pizza cooks, cut up two low-fat chicken sausages and cook over medium-high heat on the stovetop until brown. For the salad portion, use 1 package of fresh spinach leaves, combined with your favorite vinaigrette dressing and the sausage. Remove pizza from oven when the cheese begins to bubble, then top with the salad.
