Fresh beans are an April Foods of the Month. Foods like fresh green beans, lima beans, fava beans (also known as broad beans) and edamame are bite size, healthy alternatives to typical snacks like chips, pretzels or cookies. Here are some ideas to get snacking with fresh beans in April!
Green Beans with Low-Fat Ranch Dressing – Trim the ends off of fresh green beans, boil for 4 minutes, then immediately transfer to cold water so they stop cooking. Let them dry, then use for dipping into your favorite dressing. Add carrots, broccoli, and cherry tomatoes for a colorful snack!
Lima Bean and Tomato Toasts – Combine cooked baby lima beans with halved grape tomatoes, chopped red onion, olive oil, red wine vinegar and salt and pepper. Cut a whole wheat baguette into thin slices, then top with the bean mixture. Enjoy!
Edamame Hummus – Sub out the chickpeas in this recipe for cooked edamame beans for a fresh bean spin on your typical hummus. We like to eat this with whole wheat pita chips and carrots.
