Happy week of Thanksgiving! In preparation for celebrating this holiday, here’s a friendly reminder to keep things healthy. Instead of a typical sweet potato and marshmallow casserole, there are lots of other ways to enjoy sweet potatoes as a dessert. As a November Foods of the Month, this versatile veggie tastes great as a side or with a little sweetness for dessert. Here are our favorite healthy sweet potato desserts:
Mashed Sweet Potatoes with Nuts – Use this recipe for mashed sweet potatoes, omitting the thyme. Add a variety of chopped nuts for good fats and a sprinkle of brown sugar to the top and enjoy!
Baked Sweet Potato Fries with Cinnamon Sugar – Cook sweet potato fries according to this recipe, but omit the savory herbs. Instead, use a cinnamon sugar mixture for a sweet treat!
Coconut Sweet Potato Bites – Roast cut-up sweet potato chunks in coconut oil at 425 degrees for 15 minutes. Set aside to cool when done. Next, combine non-fat plain Greek yogurt with 1 teaspoon of coconut flakes in a small bowl. Sprinkle the sweet potatoes with additional coconut flakes, then dip into the yogurt with a fork. This treat will be a crowd pleaser for sure!
