OrganWise Stone Fruit Parfait

Parfaits are typically considered a dessert made by combining fruit and ice cream that is served in a tall glass. However, you can also eat parfaits for breakfast with just a few modifications. Best of all, they can be healthy! When you substitute out ice cream for non-fat Greek yogurt, and add some nuts for a healthy fat, you have a nutritious breakfast.We love parfaits with stone fruits, like peaches and nectarines. As the summer winds down, these fruits are in season so check out your local grocery store while these fruits are at their freshest. Peaches are low in calories and high in fiber. They are also high in the important antioxidants, Vitamins A and C.

To make this stone fruit parfait, slice 1 peach and 1 nectarine into bite size pieces. Layer a small bowl or ramekin with the stone fruit pieces and Greek yogurt. Top with nuts and enjoy this healthy breakfast!
