Zucchini Snacking

Summer squash, like zucchini, is an August Foods of the Month! This flavorful vegetable is versatile – it can be scooped out, cut into sticks, shredded, cubed, etc. For this reason, zucchini makes a great snack. Here are our favorite ways to prepare this veggie, and the best snacks to make with it:

Zucchini TartineAs a healthy snack, spread a little ricotta cheese on a slice of whole wheat baguette, then top with thin pieces of zucchini. Sprinkle with salt, pepper, a little rosemary, and a squeeze of lemon juice.

Zucchini Fritters – Combine equal parts shredded zucchini, carrots and diced red pepper together in a bowl (about 4 cups total; make sure excess liquid is drained). Whisk together with 3 eggs, 5 cups of cornmeal, 1 package of feta cheese, 1/2 tsp baking powder and salt, if desired. Use your hands to mold the batter into mounds and cook in extra-virgin olive oil over medium-high heat on the stovetop for about 3 minutes on each side. Serve with a dollop of non-fat plain Greek yogurt. Enjoy!
